Mac and cheese
Total time: 15 minutes
Serves: 4
Ingredients
- 2 cups elbow macaroni
- 2 cups water
- 2 Tbsp butter
- ¼ tsp salt
- 4 cups cheddar cheese
- 1 Tbsp mustard
- ¼ tsp garlic powder
Method
Add the macaroni elbows, water, butter and salt to the Dutch oven and cover with a lid.
Place the Dutch oven over hot coals and cover the lid with more coals, cooking for about 10 minutes, or until the liquid has been absorbed.
Set the oven aside and stir in the cheese, mustard and garlic powder, ready to serve.
Sloppy Joes
Total time: 30 minutes
Serves: 4
Ingredients
- 500g mince
- 1 Tbsp olive oil
- 1 white onion, chopped
- 1 tsp garlic powder
- 1 tsp chilli powder
- 1 tsp salt
- ½ tsp pepper
- 2 tbsp tomato sauce
- 2 Tbsp brown sugar
- 1 can tomato puree
- 2 Tbsp fresh lemon juice
- 1 Tbsp Worcestershire sauce
- 1 tsp mustard sauce
- 4 hamburger buns
Method
Brown the mince with the oil and onion in a large skillet over a medium-high heat. Pour off any excess oil.
Add the rest of the ingredients, bring to the simmer then cook for a further 15 minutes.
Serve on warm, toasty burger buns. Pair with fresh coleslaw for a bit of crunch.
Apple cobbler
Total time: 1 hour
Serves: 4
Ingredients
- 6–7 medium-sized green apples, sliced
- ½ cup granulated sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 2 tbsp lemon juice
- 2 tbsp butter
Cobbler topping
- 1 cup plain flour
- ¼ cup granulated sugar
- 1 ½ tsp baking powder
- ½ tsp salt
- ¼ cup unsalted butter, cold and cubed
- ½ cup milk
Method
While the coals on the fire are getting nice and hot, line a Dutch oven with baking paper.
Add the sliced apples into the Dutch oven and sprinkle with sugar, cinnamon, nutmeg, lemon juice and butter. Mix through the apples.
Place the Dutch oven over the hot coals and cook the apple mixture, stirring occasionally, for around 15 minutes or until the apples are soft. Remove the oven from the coals.
Combine the cobbler topping dry ingredients in a mixing bowl then rub the cubes of butter into the dry ingredients for a crumbly consistency.
Gradually add milk to the crumbly mixture, stirring until a thick batter forms.
Spoon the batter evenly over the top of the apple filling and place the oven back on the hot coals with the lid on. Add hot coals to the lid for an even cook.
Bake for around 30 minutes or until the cobbler topping is golden brown.
Serve with cream or ice-cream.
